Aussie Lamingtons Saves the Day

There are some days where a sweet tooth can kick you and takes you by the horns. No problem. However, I have the perfect little sweet desert to beat that sweet tooth down with an ugly stick. It is sweet and the name spells out very readily. It is one of those desserts that can brighten up your day no matter how you are feeling. This recipe is one that I learned a while ago. It tastes just wonderful.

This desert is easy and fun to make. It doesn't take long to make it. You will have fun making and sharing it with friends, as well as, family. They will be begging for more of it. This Aussie tradition does speak volumes about being an Australian tradition. Let’s get started with the ingredients and directions.

Ingredients

1 day-old sponge cake or fresh butter cake

3 cups  granulated sugar

8  3/4  oz  of water

1/2 cup of cocoa

1  teaspoon of vanilla extract

3 cups  coconut, desiccated

Directions

Purchase the cake or make your own in a slab cake pan

Cut the cake into equal size cubes   2 to 2½"

Spread out the desiccated coconut on a large plate and set aside

Mix the sugar with the cocoa in a pan. Slowly add the water until the mixture is thoroughly mixed

Boil gently for about 12 minutes without stirring

Remove from the heat and add the vanilla.

Stir for 1 minute and then let cool slightly

Using a fork, quickly dip the cake cubes into the chocolate mixture

Roll the chocolate covered cubes in the desiccated coconut until covered as much as desired

Place on a wire rack or a wax covered plate or flat pan so that the cake cubes do not touch either other.

When completely cooled, the coating will be set and the Lamingtons will be ready to eat.

Now, it tastes really good and cures the sweet tooth when it is ready to beat you down. Having this slice of Aussie sweet magic, it can cure blues and perk you right up. I like fixing a latte to go with it. It goes down real smoothly with the Lamington.  The beauty of this Aussie secret is that is perfect for any occasion or for dinner guests. It will win them over. It is Aussie through and through.
