Every
year, I hear people complain about fruit cake and how it is the least favorite.
We hear stories how it can become a paper weight in some people’s
offices. Or it is hard as a brick. I had tried over the years many
people’s recipes for fruitcake. Some of them are good and some are downright
awful. The awful fruitcake recipes that you would not feed to your dog, it is
that bad. I know of fruitcake recipe that can win people over in all fire
hurry. It has some octane to it.
This
fruit cake will leaving you and your guests wanting more of it. It is good
coming out of the oven It smells wonderful. It is not one fruitcake that you
can pass up. Plus, you want to share it with friends and family. The good
news you don’t have to use it a lead weight for your papers at your desk. Let’s
get started with ingredient and directions.
Ingredients
Prep Fruit Mix
1 ½ cup dried fruit, chopped or 1/2 c homemade tutti frutti
mix,1/2 c golden raisins,1/2 c dates)
1/3 cup pistachios, chopped
1 tsp lemon zest (only colored portion of rind), grated or chopped
1 tsp orange zest (only colored portion of rind), grated or chopped
1 cup rum
1 ½ cup Almond Flour
1/3 cup Coconut Flour
1 teaspoon baking soda
2 eggs
For the Caramel Sauce
1 cup Sugar
3 tbs water
1/2 cup apple juice
2 tbs Ghee
2 Cloves (whole), freshly ground
2 Cardamom Pods, freshly ground
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
pinch freshly grated Nutmeg
Directions
Combine alcohol, fruit, zest and nuts in
plastic containers.
Let this mixture soak overnight or up to 1
week
It helps to plump up the fruit.
In a saucepan over low heat, combine coconut
sugar and water - stir occasionally until it forms a caramel type sauce.
Combine apple juice, ghee and spices to the pan
and put on medium heat for about 5 minutes.
Just keep a real close eye on mixture and mix
it well and often.
Combine the fruit and bring mixture to a
simmer for 5-6 minutes.
Turn off the burner on the stove and allow mixture
to cool on stove because you want to
make sure that it tastes just sweet enough.
In a bowl, mix dry ingredients together.
Next, combine the eggs.
Fold in the completely cooled fruit mixture
and spoon into a loaf pan.
Bake for 325 degrees for 35-45 minutes.

wonderful. It has the right amount of octane to it. Your neighbors and friends as well as family
will want this fruitcake. It leaves those ordinary bland fruitcakes in the
dust. It has more kick to and put things into high gear. The good news is it is
