Chicken Mushroom Quiche Got You on Cloud Nine





Have you try to find a recipe that never goes out of style and you misplace and later found it stuck between a bunch of books? I did have this problem here recently. I put the recipe inside the book and forgot about it. I found it  two days. So, the recipe I have was one my favorites from Paleo. Most of all, it is wonderful.

This dish will leave many people asking for it right off the top of the bat. It is so good that you have to shake people off with a stick. Here is the other part of this tale. This recipe will make people howl to the moon and back because it is sooo good.  This dish speaks volumes and is one of my perennial favorites with my family and friends. The name of this dish of healthy goodness is Chicken Mushroom Quiche. Let’s get started with ingredients and directions.


Ingredients:

    2 ounces dried mushrooms
    1-1/2 cups leftover shredded chicken
    2 teaspoons dried sage leaves
    6 eggs
    1 cup full-fat coconut milk
    1/2 teaspoon sea salt
    1/2 teaspoon black pepper
    Coconut oil

Directions:

If using dried mushrooms, soften them by covering them with boiling water in a heat-proof bowl for about 30 minutes.
   
Drain them well.
  
Preheat the oven to 375°F.
  
Grease a casserole dish with coconut oil.
 
If you are using a smaller one, you may have to move up the baking time  by a few minutes since the quiche will be thicker.

In a large skillet over medium heat, add the leftover chicken, mushrooms and sage to the pan and cook for a few minutes, making sure there is no moisture left from the mushrooms

Pour mixture into the greased casserole dish, and set aside.
   
Crack the eggs into a medium bowl.

Combine the coconut milk, sea salt and pepper.

Whisk the ingredients.

Add the egg mixture into the casserole dish.
   
Bake the quiche for about 30 minutes or until the center is set and not jiggly.

When this dish comes right out of the oven, you know that is time for mmmm goodness all the way. It is worth having friend or even next door neighbors to invite to have this dish of goodness. It is very tasty and clean-up is very easy. I had this yesterday afternoon and was able to invite a couple of my friend over for brunch. It worked out really well.
