Buffalo Chicken Can Rock the House

Ever have one of those days where your get up and go, it just got up went out the door. Also, do you feel like your game is down today. Well, I know of a recipe that will put the fire back and give a bit of a bounce in your step. It is one that cannot be passed up. Mostly, this recipe has the fire the get things going.

I have tried this recipe a last Sunday for lunch and was feeling kind of hungry. It is a Paleo recipe that can get things fired up. This recipe will win people over. I do vouch for it. It is that my next door neighbor decided give me a bowl of it. It really put the spring back in my step last Sunday. This recipe is called Buffalo Chicken Soup. It is definitely the elixir that belongs to nature. Let’s get started with the ingredients and directions.

Ingredients

1 head of cauliflower, chopped
4 chicken breast
2 Tbsp chicken stock
2 Tbsp honey
3 stalks of celery
1 cup Louisiana hot sauce
1 onion, diced
1 tsp black pepper
1 Tbsp garlic powder
½ Tbsp onion powder
½ cup coconut milk
½ Tbsp fresh parsley
½ Tbsp chives
½ Tbsp dried dill
½ cup chopped cilantro

 Directions

Take a large stock pot, combine 8 cups of water, cauliflower and chicken breast.

Bring it to a boil. Then, just reduce the heat a bit.

When the chicken has been cooked, remove it and put aside for now.

Combine coconut milk, chicken stock, spices, honey, and the red hot sauce.

Use a stick blender or mixer and puree just a bit.

Shred the chicken with a fork or a knife and put in the pot.

Chop up the celery and onion and put it in the pot

Mix in parsley, chives and cilantro and allow it to simmer for about 20 min.

A bowl of this can perk you up and put the fire back. I had bowl of this and was ready to go. I mean literally ready to go. This is the soup is the type of soup you give to family and friends. You want give it people who are not feeling up. It will fire them up and make them feel good afterward. I love serving to family and friends. I can see them smile afterwards. It is goodness all the way. It does make you feel like throwing a party. Its flavors are magical. They know how to awaken the taste buds entirely. It is a party going on.
