Louisiana Catfish with Corn and Okra




There always certain recipes that never go out of style no matter where you go in the world. Catfish is one of those recipes that does not go out of style. I have eaten catfish many times. It tastes wonderful. The thing about catfish is that you have to be careful of the bones. Catfish is known for picking out the bones. I tell you a story about whopper of catfish that I caught with my family on trip. I was about 14 years old at the time. We brought a large catfish that was big enough to make any seafood store cringe envy. It was massive it weight about 12 libs. It was a monster of fish. My mother cleaned and fried. We had leftovers from it and had friend okra with it.  The recipe is better that I had long ago. I had visited my family to have this health a while ago.

The miracle of this recipe it is healthy and will not make you feel guilty about eating it. It is super easy to make and cleanup is easy, too. The name of this catfish recipe is called Catfish with Corn and Okra. I had gotten this recipe a while ago. I was able to contact a seafood market to sneak in some catfish and was successful that I had some last night.  Let’s get started with ingredients and instructions.


Ingredients
2 cups fresh or frozen sliced okra
1 3/4 cups fresh corn kernels or frozen
1 medium onion, diced
2 teaspoons plus 1 tablespoon extra-virgin olive oil, divided
1 3/4 teaspoons Cajun or Creole seasoning, divided
1 pound catfish fillets, patted dry and cut into 4 portions

Directions
Preheat oven to 450°F.

Mix in the okra, corn, onion, 2 teaspoons oil and 3/4 teaspoon Cajun  seasoning in a large bowl.

Spread the mixture out on a large rimmed baking sheet.

Roast, mix twice, until the vegetables are tender and beginning to brown, 20 to 25 minutes.

Meanwhile, sprinkle both sides of catfish with the remaining 1 teaspoon Cajun  seasoning.

Heat the remaining 1 tablespoon oil in a large non-stick frying pan over medium-high heat. 

Reduce heat to medium, add the fish and cook until just cooked through and starting to brown, about 4 minutes per side. 

Serve with the roasted vegetables.

This dish is goodness all the way through. It lives up to its name. Your friends and family will want to know how to make. There is not any secret. You gladly hand it to them just as long as they come over for it and have some catfish. This is recipe can win anyone over. The taste and smell can do just that very thing.
