Meatloaf That Makes Mom Look Good

Now, we hear that comfort food can't be healthy. I have to refute that assumption. I have a recipe that will knock that assumption out of the water. It is a Paleo recipe and won me over big time. Anyway, this recipe is great. It tastes mmmm goodness all the way.It has bit of a kick to it. This recipe does rock. It will knock all of those bland and boring meat loaf recipes to shame. It is very healthy. Most of all, I can vouch for it because I had this for dinner last night and is really worth sharing.

This recipe does win over the most harden pickiest eater on the planet. This recipe is soo good that it will make even Mom look good. It tastes wonderful. The key ingredients are what is in it. It will win over your friends and family. The name of this wonderful Paleo recipe is Mom’s Meatloaf with Style. Let’s get cracking with the ingredients and directions.

Ingredients

    2 lbs of ground beef


    3 eggs, whisked


    1/2 cup almond flour


    1/2 onion, chopped small


    1 (10 oz) package of frozen spinach, thawed and water drained


    1/2 of a red bell pepper, chopped small


    1/2 cup of your favorite BBQ sauce


    1 tsp of chili powder


    1 tsp of salt


    2 garlic cloves, minced or presseed


    1 tsp of oregano


    1 tsp of thyme


    1/2 tsp of cayenne


    2 tbs of olive oil to sauté vegetables


Directions
 Preheat oven to 350 degrees F


 Sauté onions and peppers over medium heat in a saucepan with 2 tbs of olive oil just until tender 


 Combine spinach, garlic, and spices to the sautéed vegetables in the pan, gently stir


 Remove saucepan with vegetables from heat, set aside


 Take uncooked ground beef or ground turkey and put it in a large bowl


Pour the whisked eggs and almond flour and mix into the ground meat with your hands    


Pour the vegetables from the saucepan into the bowl


Combine the vegetables into the meat with your hands


Now, take mixture form it into a loaf shape and center in a loaf pan.


It should be a little smaller than the pan itself.


Next, pour the BBQ sauce over to cover top and sides of the meatloaf


Cook for roughly about 1 hr to 1 hr 15 minutes.


Oven cooking times do vary so often and check with a meat thermometer to make sure because  the internal temperature of the meatloaf should reach roughly about 155-degrees F


 Remove from oven and allow to set for about 10 minutes before slicing

Now, does smell great and the aromas are present . This recipe does win over people that you can bring over for Sunday lunches and dinners. It is not dry. It is even better. This recipe does rock.
